It’s here! Finally, my FAVORITE season! Autumn! Okay maybe it’s still only early September or August… or July. But no matter what time of year it is, these delicious healthy pumpkin spice waffles are the perfect cozy meal! Not only are they the perfect thing to satisfy your love of autumn, but they are packed with protein and healthy ingredients! No flour. No refined sugar. Nothing harmful to your body! Only real food.
What’s special about these Healthy Pumpkin Spice Waffles?
Unlike post recipes you’ll find out there in the vast world of pumpkin spice recipes, this recipe for Healthy Pumpkin Spice Waffles is made with all nourishing ingredients! Sadly, processed ingredients like refined flours, refined sugars, seed oils, and other harmful ingredients. If you are confused about what foods are healthy for you (most people are with all the mixed message we get from influencers!) These delicious waffles contain no seed oil. No gluten, no refined sugars, and nothing artificial. And let me tell you, that does not mean they taste gross. Believe me. They are really delicious. All the ingredients in these waffles are good for you and will leave you feeling amazing!
What will I need to make Healthy Pumpkin Spice Waffles?
Here’s all the healthy components you’ll need to make these yummy, protein packed pumpkin spice waffles:
Eggs
Eggs are essential for this recipe! They are so nutrient dense and contain around 6g of protein each! Egg yolks contain omega-3 fatty acids, brain nourishing cholesterol, and other amazing nutrients your body needs! They also give these waffles a great texture. I always recommend free-range organic eggs, but any will do!
Pumpkin Puree
You can make your own pumpkin puree or just used can from the store. Be sure you buy pumpkin puree and not pumpkin pie filling! The only ingredient should be pumpkin. I recommend organic. You can get some here.
Vanilla Extract
This ingredient brings out so much flavor in these yummy pumpkin spice waffles! I can just taste the warm vanilla flavor that comes with every fluffy bite of these waffles! Don’t forget it! You could also use vanilla bean powder if you want. You can get some here.
Salt
You would be surprised at how how much of a difference adding salt to a recipe will make! This is off topic but I’ve been making raw milk ice cream recently and adding salt changes the whole thing from boring to delicious with just a pinch. ANYWAY. The point is, make sure you add some salt. Be sure your salt is unrefined and real. Not iodized or table salt. You can get my favorite brand here.
Pumpkin Pie Spice
This delicious spice blend will make you feel like it’s October with just a whiff. You can’t have pumpkin spice waffles without pumpkin spice! Make sure your pumpkin spice doesn’t have any added sugar or anything. You can get some here.
Arrowroot Powder
Arrowroot powder is my favorite flour alternative. Unlike most flours and starches in is not refined and is made simply from the dried and powdered root of Maranta arundinacea. Yo can get some here.
Collagen Powder
This is also one of my favorite super foods for baking healthy treats! I use it in place of flour to thicken up recipes. I LOVE collagen. It is so amazing for your skin, hair, and nails and contains proteins your body needs. I always recommend grass-fed collagen. You can get some here.
Sweetener of choice
You’ve got a few options when it comes to sweetening these waffles. You can use 1/4 cup unrefined maple syrup or raw honey, or a tsp liquid stevia. You could also use 1/4 cup coconut sugar or rapadura. Whatever floats your boat.
Baking Powder
Not really sure what to say about his one… You need baking powder to make the pancakes rise!
Oil to grease the pan
I ALWAYD recommend butter. Butter is so nourishing and nutrient dense! However, you can also use avocado oil, coconut oil, or another type. Read my post here about which fats and oils are healthiest. You’ll need enough of whichever oil you choose to grease the waffle press.

Okay that was a lot! Here’s the complete list with measurements:
- 1/2 cup arrowroot powder
- 1/2 cup collagen powder
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1 tbsp pumpkin pie spice
- 1 tbsp vanilla extract
- 4 eggs
- 1/2 cup pumpkin puree
- 1/4 cup maple syrup (or another sweetener) or a 1 tsp of liquid stevia.
- Enough butter (or another oil) to grease your waffle press
What tools will I need to make Healthy Pumpkin Spice Waffles?
Now that you know all the ingredients, you might be wondering what tools you’ll need.
A Waffle Press
Obviously, you need a waffle press to make waffles. My favorite type are mini single serve waffle presses. They are so cute and easy to use! You can even get some that have fun shapes on them. If you want a big ol’ waffle you can just use a normal one. Get my FAVORITE waffle press here (hint hint: it’s shaped like a pumpkin! How perfect!) If you want a bigger one, get that here.
A Whisk and Bowl
You’ll actually need two separate bowls for this recipe. One for dry ingredients and one for wet. If you are confused by why you need to mix the dry and wet ingredients separately, it’s for the baking powder. Baking powder is activated by moisture. Therefore, you want to wait until the last possible second to activate it so that the waffles rise properly. Hope that made sense. You will also need a spatula or whisk or something else to mix the ingredients.
How to make Nourishing Pumpkin Spice Waffles
Here’s the good part:
1. Heat up your waffle press
Start by heating up your waffle press and greasing it with the butter (or other oil). You can let it heat up while you get the batter ready.
2. Mix the wet ingredients in a bowl
Add the pumpkin puree, vanilla, eggs, and whatever sweetener you chose to a bowl and whisk until smooth.
3. Mix the dry ingredients in a bowl
Next, mix the dry ingredients. Add the arrowroot, collagen, pumpkin pie spice, salt, and baking powder to a separate bowl.
4. Mix both mixes together
After that, pour the dry ingredients into the wet ingredient bowl and whisk until smooth. Be sure you do this as close to cooking as possible so the baking powder activates properly!
5. Pour the pumpkin spice waffle batter into the waffle press
This will vary depending on how big your waffle press is… either way scoop the proper amount of batter into the center of your waffle press and then close the press. Hopefully your waffle press has a light or something to tell yow when your waffle is ready. If not, wait about a minute before opening the press to check if your waffle is cooked.
6. Add toppings
This is the fun part! Top your waffles with chocolate shavings, maple syrup, walnuts, homemade caramel… anything cozy and delicious! Of course I will always recommend topping your waffles with nutrient dense nourishing BUTTER!
7. Enjoy your pumpkin spice waffles!

Sit back, maybe grab a cup of coffee or tea, light an autumn candle… and just enjoy your waffles! They are so good for you! - Make them into pancakes
- Top with browned butter
- Sprinkle with roasted pecans
- Make a mini Bundt cake (Bundt cake press here)
